For the countertop:

RECIPE PREPARATION Plum and walnut cake:


Mix the foam eggs with the sugar.

Incorporate the diced butter, at room temperature, until you get a foam, then add the baking powder, vanilla bean sugar and flour, gradually.

We will get a slightly flowing dough.

Filling:We wash the plums, cut them in half and remove the seeds.

Walnut countertop:

We mix the eggs with the sugar together with the sugar.

Add the ground walnuts, grated lemon peel and incorporate them well.

I lined a tray with baking paper (I used a 24/37 cm one) and poured the first top.

2 large apples
7-8 plums
4 eggs
100 g sugar cough
150 g flour
3 tablespoons milk
75 ml of sunflower oil
1/2 teaspoon baking powder
1/2 teaspoon baking soda
a teaspoon of ground cinnamon
two tablespoons powdered sugar

Method of preparation
We peel the apples, remove the spine, then cut them into thin slices.
We wash the plums well, break them in half and remove the seeds!
Beat the eggs, add the caster sugar and beat for another 3-4 minutes, then pour the oil and milk.
Homogenize well.
The sifted flour is mixed with baking powder and baking soda, then added over beaten eggs.
Wallpaper a tray with baking sheet and pour the composition, spread everywhere and level with a spoon.
From place to place we place halves of plums, and around the plums we place slices of apples. Sprinkle ground cinnamon on top.
Place the tray in the preheated oven and bake for 10 minutes on a high flame, then 15 minutes on a suitable flame.
Cool the cake in the pan, then cut into squares and dust with powdered sugar.

As I already think you are convinced at first glance on the list, the ingredients are very simple, found in any pantry. It is good to weigh and portion them all in advance, so the job will go much faster. I confess that I did not follow the recipe in the book completely. This meant using no less than 600 grams of flour, much more baking powder and half a kilogram of sugar. For the same number of servings I have considerably reduced the quantities.

1. In a large bowl, mix the flour with the baking powder and salt. Add lemon peel, 150 grams of caster sugar and cold butter cut into pieces. Work with the mixer until the mixture in the bowl has a sandy appearance (image on the right).

2. The eggs are separated and the egg whites are kept aside. The yolks, vanilla extract and sour cream are added over the table of flour and butter from the bowl and work with the mixer (or knead quickly with your hands as cold as possible) until the dough begins to gather (image on the left). Pour the contents of the bowl on a food foil, using which to shape a ball (image on the right). Let the dough cool for 15 minutes, during which time the oven heats up to 200 degrees Celsius.

3. After the rest time, sprinkle the work surface with a little flour and with the help of the rolling pin the dough is spread in a sheet about 1.5-2 cm thick. Personally, I found the sheet very thick, this being, after all, a tart-like dough, but the book clearly specified the thickness and in the illustrative image it is quite clear that the dough base is quite consistent. The dough sheet is transferred to a tray greased with butter and lined with flour or lined with baking sheet.

4. Place the tray in the preheated oven at 200 degrees Celsius and immediately reduce the temperature to 180 degrees. Bake the dough for 20-25 minutes, until it starts to color slightly on top (if it stains faster, cover the tray with a sheet of moistened baking paper and continue baking until at least 20 minutes).

5. Meanwhile, beat the egg whites until stiff and add the remaining 160 grams of sugar, one at a time, beating until the sugar is completely dissolved and the walnuts are cut into large pieces with a knife.

After the first 20-25 minutes, remove the tray from the oven and grease the dough on the entire surface with the jam. Cover with meringue, level and sprinkle with nuts. Put it back in the oven, reduce the temperature to 165 degrees Celsius and bake for another 20 minutes.

6. Allow the cake to cool in the pan and then portion as desired, into diamonds, squares or rectangles. It goes great with a coffee or a cup of tea and, as I said, it can be kept in a cool place (pantry) for a few days without any problems.

I don't think this cake is foreign to you, it is a cake that everyone makes, especially with apples and meringues, only that I adore it and because of this I make it in various fruit variants and I also tried the Cake with plums, meringue and walnuts.

This cake reminds me of my childhood, although no one in my family has ever made this cake when I was a child, but whenever I eat the thought flies through my childhood I don't know why maybe because it's sensational.

1/2 teaspoon ground anise

I separated the yolks from the egg whites, I mixed the yolk with the sugar and the essence and I mixed it until the sugar melted completely.

I then added the oil, milk, flour and baking powder, mixed well and the dough thus obtained I put it in a tray lined with oil and flour and baked it over low heat.

I cut the plums into slices, put them in a pan with the anise, cinnamon, nutmeg and sugar and left them on the fire until they softened well, then I set them aside to cool a little.

I beat the egg whites hard with a pinch of salt, I added 12-13 tablespoons of sugar over them and I mixed well until I got a glossy meringue.

After the dough has baked for more than half, I took the tray out of the oven, put the plums, some of the walnuts over the top, then the meringue and the rest of the walnuts on top and put the cake in the oven again until the meringue is nicely browned.

I let the cake cool well and then I portioned it in my opinion this is the childhood cake & # 8230 worth trying!

Cake with plums and nuts

Plums washed, well drained and broken in half, mix them with ground walnut, sugar, bourbon vanilla sugar and cinnamon powder. Then place this combination on the bottom of the tray (20/30 cm) lined with baking paper.
