We clean the mushrooms and take the foot from them. Place the mushrooms on a tray.
We cut the legs into small cubes.
Peel the onion and garlic and cut them into scales (diced or grated).
Put oil or butter in a pan over low heat, and when it is hot, heat the onion, after 1 minute add the garlic and the legs from the chopped mushrooms. Sprinkle with lemon juice (prevents oxidation of mushrooms and helps them retain their white color) and season with salt and pepper. Let it cook for about 10 minutes (maximum).
Fill the mushrooms with this composition (I put a full spoon in a mushroom), place pieces of cheese and half a cherry tomato on top.
Preheat the oven to 200 degrees and put the tray in the oven for 15 minutes.
