Spicy Honey Instant Pot Chicken

Ever since I got my fancy pressure cooker I have been fiddling with new Instant Pot recipes and have come up with many that are so quick and my family loves! This spicy honey Instant Pot chicken is one of our favorites though! (affiliate link present, originally published 6/17)

My littlest love orders &ldquosweet chicken&rdquo when we get to Chinese food restaurants so I aimed to create something similar.

I wanted a little bit of heat this time though since we love Sriracha! We&rsquove also done this with other simple ingredients like in our Instant Pot black pepper chicken.

    Today, we’re updating an old recipe that seems strangely appropriate for the current times.

    This is one of my personal favorite savory recipes on here, and you guys love it, too. It’s been one of my top 10 most popular recipes in 2019, 2018, 2017, and 2016.

    I’ve been meaning to update the post with some new pictures (and a new video!) for quite some time, and now seems especially appropriate.

    With the current world climate, more and more people are turning to produce delivery boxes rather than the grocery story. As a result, people are getting vegetables they normally don’t cook with — and are searching for recipes.

    I’ve had more than a few people reach out and ask what to do with eggplants. This, friends — this is what you should do with your eggplant.

    It’s also appropriate because this week is Passover, and Moroccan-inspired food like this is often a staple for our family for Passover. No grains or chametz present in this sweet and spicy harissa and honey glazed Moroccan eggplant!

    The Most Tender Eggplant

    One of the biggest complaints people have about eggplant is the texture. It can often be too stringy or too chewy.

    Let’s talk about the very best way to make sure your eggplant stays super soft and tender. It’s time for my favorite subject… kitchen chemistry!

    Kitchen Chemistry

    Sweating an eggplant — sprinkling salt on the surface and letting it sit — draws out extra moisture from the cells of the eggplant through a process called osmosis. Solvent (the water in the cells) will always move from an area of low salt concentration (inside the eggplant) to an area of high concentration (the salted outside of the eggplant), drawing the water out.

    There’s a myth that sweating an eggplant reduces bitter taste, but it’s just the salt masking the bitter. Whether we salt an hour ahead of time or just before cooking, the taste is the same.

    Where we see a big difference, though, is the texture. Sweated eggplant will be softer, especially the skin – meaning we don’t have to peel our eggplant before cooking!

    After removing the excess water, the eggplant is ready to absorb the next liquid we add to it — our delicious honey and harissa sauce.

    Sweet and Spicy Sauce

    All the flavor for this dish comes from the sauce.

    Start by sauteing fresh garlic and ginger, just until fragrant. Add in cumin and harissa, a North African chili pepper spice.

    Pour in a mixture of lemon juice and honey and simmer with the eggplant until the sauce is reduced and thick, covering the eggplant slides.

    The end result is super soft and tender eggplant that nearly melts in your mouth.

    What to Serve with Moroccan Eggplant

    We usually have this as our main dish, served with a loaf of fresh, crusty bread (except during Passover, obviously) and a big pile of sauteed greens or a salad.

    As a side, it is perfect with chicken or fish. Paprika Chicken with Chickpeas or Moroccan fish stew are two of our favorite options.

    The Moroccan eggplant is also just as delicious cold as it is warm, so it’s a great side for a picnic or potluck. Or as leftovers for lunch the next day… assuming there is any left.

    Once a month I like to pop over here to share with you a recipe I’ve been dreaming up. This month it’s all about deliciously sweet and smoky honey chicken.

    I wanted to create a recipe for you today that is easy to make and family-friendly. I know with all the rush of back to school that we all need a few recipes in our repertoire that will see us through the fall. This is the kind of chicken dinner recipe I like to make when I’m short on time but craving comfort food.

    You’re going to quickly sear the chicken on one side only. I love crispy chicken skin, but you can always make yours skinless to cut down on the fat.

    Next, you’re going to flip the chicken over and pour in the honey sauce. Bring the pan to a boil and let it simmer for 15 minutes.

    While the chicken is cooking, make a pot of rice and a simple salad.

    The honey sauce the chicken is cooked in is DELICIOUS poured over some rice. Sometimes when I make this I reduce the sauce a little to thicken it by boiling it hard for a minute or two after I take out the chicken. It’s great either way.


    Mulsum – Spiced Honey Wine

    I first made this wonderful drink about 13 years ago when I wanted to re-create a very old recipe called Mulsum. Mulsum or honey wine (also sometimes called mead) is an ancient recipe. In fact, it’s considered the oldest alcoholic drink in the world. The base for this unique and colorful drink is red wine.

    Wine’s history is long and significant, dating back as far as 9000 years most likely to the Caucasus region in Eastern Europe/Asia where wild grapes are grown, and the earliest evidence of rustic wine production was discovered to date. Ancient Romans later refined wine production by introducing barrels and cultivation techniques, which enhanced its properties and taste. This led to widespread production making wine a popular beverage throughout much of the ancient world.

    Mulsum is just one of many alcoholic drinks developed over time but is the oldest one to date. It’s traveled many roads, but hasn’t really varied much. Each culture since ancient times seemed to embrace the simple and rustic nature of this drink, adding their own special touches yet keeping the authentic characteristics intact. For this recipe, I was inspired by the popular Mulsum that was served in the ancient Roman world.

    History aside, it’s one fabulous drink.

    In the ancient world, most wine produced was bitter because wild grapes weren’t as sweet as the hybrid grapes used today. To reduce the bitterness and make it more palatable, the Romans mixed in honey. They also diluted it with two parts water to make the wine more acceptable for regular consumption. The result was a sweet and refreshing drink with very little alcohol content a bit like spiked punch. Only better.

    The ancient recipe for Mulsum was fairly simple and didn’t require any cooking. There were more exotic recipes later on which included certain peppery spices and a lengthy fermentation process. But the most popular Mulsum contained just three ingredients wine, water, and honey.

    While I love the traditional recipe for Mulsum, I wanted to also include some warm spices. Deep rich spices add a bevy of flavors and healing properties. I find myself adding a dab of this spice or that wherever I can, like in my Pau d’Arco Latte . Spices and wine…wine and spices……the best.

    Using spices would be tricky because they would have to be simmered in or else they would just sit on top looking lost and confused. You can’t just add ground spices to a watery liquid and expect them to blend in they won’t. Simmering would work but it would also remove most of the alcohol and change the characteristics. Not necessarily a problem but not my intent.

    I originally simmered my Mulsum and was very satisfied with the results. It was my standard guest offering for years and always received rave reviews. But I really wanted something a little closer to the authentic ancient recipe. In other words I wanted the spices infused into the wine without cooking them. And I wanted the earthy flavor of the red wine and the sweetness of the honey to shine through.

    One day, I decided to try prepare my Mulsum a different way. I stirred honey into the chilled wine, added only whole spices, and skipped the cooking altogether. This mixture was placed in the refrigerator for 24 hours. Now why didn’t I think of that before?

    After 24 hours, I gave it a taste. Amazing. It was even better than my previous batches. The flavors were fragrant and aromatic and the sweetness was enticing. I used citrus honey for this batch which also added a spark of citrus flavor. It was incredibly delicious with the alcoholic content intact as in the ancient version. I could now serve this as a truly ancient wine beverage. I’ve been serving my Mulsum this way ever since.

    Mulsum is an entrancing beverage that can flow freely while entertaining, having a romantic evening, sharing with friends, and when you want a sweet and relaxing drink to unwind with. This recipe is my take on the unpretentious yet sophisticated ancient drink. I hope you enjoy it.

    Mulsum (Spiced Honey Wine)

    This recipe suggests using honey for a more authentic flavor but you can use any sweetener you want.

    Since the wine isn’t cooked, you need to allow the spices to infuse for a good 24 hours prior to serving. After that, its ready to enjoy.

    Try to use good quality red wine, preferably organic.

    • 3 cups lukewarm water
    • 1 cup red wine
    • 1 whole cinnamon stick
    • 1 whole nutmeg
    • 1 tsp whole cloves
    • 4 Tbsp raw honey or other natural sweetener to taste
    • Slice of orange or lemon for each glass (optional)
    1. Add the water, wine and honey to a large container or pitcher and stir well. If you are using very thick honey you may want to heat the honey until thin before using or blend the wine, water and honey together in a blender before transferring to the container or pitcher.
    2. Add the spices to the wine.
    3. Place the wine in the refrigerator for 18 – 24 hours.
    4. When ready, remove the spices.
    5. It’s ready to serve with an optional slice of orange or lemon. You can warm if you want as well.
    6. Yields about 4 cups.
    7. Can be stored refrigerated up to 5 days.

    Note: For a alcohol-free version, you can use non-alcoholic red wine or you can use my original recipe of adding the ingredients to a saucepan, bringing it to a boil, reducing the heat and simmering covered for 30 minutes before removing the spices. This method removes most (95% or more) of the alcohol.


    Begin by making the marinade: whisk together the lemon zest, lemon juice, orange zest, orange juice, olive oil, mustard, honey, red pepper flakes, garlic, thyme, and salt.

    Place the chicken, carrots, onions, and dates in a large sealable plastic bag. Add the marinade and seal shut. Massage to make sure everything is evenly coated with the marinade, then marinate in the refrigerator for at least 6 hours or overnight.

    Transfer all ingredients from the bag, including the marinade, to a rimmed sheet pan. Turn the chicken skin side up.

    Roast until chicken is lightly browned and cooked through, 40 to 45 minutes. Turn on broiler (leave pan on middle rack), and cook a few minutes more, or until the skin is golden brown and crispy. Watch very carefully: the honey in the marinade can cause the skin to burn quickly!

    Transfer the chicken, carrots, onions and dates onto a platter, along with the sauce in the pan. Sprinkle the parsley, scallions and pistachio nuts over top and serve.


    The Most Underrated PaleOMG Recipes

    Since I’m still celebrating 10 years of PaleOMG this week, I wanted to share what recipes I think have stood the test of time (even if they were created recently) and should absolutely be whipped up in your own house ASAP. Yesterday I shared the 50 Most Popular PaleOMG Recipes of All Time and I was quite surprised with some of the results…because some of those recipes are total shit compared to so many others.

    It’s important to remember that I started this blog when I was 23, fresh out of college with a degree in health & exercise science, with absolutely NO background in cooking. I didn’t grow up cooking with my family or experience it with roommates, I simply taught myself by watching The Food Network nonstop. All this to say, I had no idea what I was doing and I’m still continually learning every day, making mistakes, and getting better with time. So today I thought I would share my own favorite PaleOMG recipes that include recipes I make over and over, and recipes that I don’t think get enough love. It’s easy to not see all my recipes that I come out with since I share 2 new recipes each week and used to share at least 5, so I hope this post shares some recipes you may have missed or reminds you of a recipe you loved in the past.
